Blt Bites Tomatoes
Cut a small slice from the top of each tomato.
Blt bites tomatoes. Directions cut slice off tops of tomatoes. Invert tomatoes on paper towels to drain. Scoop out the insides and drain upside down on a paper towel. Fill each tomato with the bacon mixture and refrigerate for 1 hour.
Ingredients 16 to 20 cherry tomatoes 1 pound sliced bacon cooked and crumbled 12 cup mayonnaise 13 cup chopped green onions 3 tablespoons grated parmesan cheese 2 tablespoons snipped fresh parsley. Add the breadcrumbs to the hot bacon fat. In a small bowl combine all other ingredients. If serving as a fancy appetizer use a tiny dollop of sour cream on a serving plate to help these little treats stay upright.
Reduce the heat to medium low. Heat over medium heat until beginning to sizzle. Spoon mixture into tomatoes. Ingredients 6 large eggs hard boiled and peeled cup mayonnaise 1 tsp dijon mustard 3 pieces cooked bacon finely minced 1 tbsp finely minced chives with extra for plating cup chiffonade romaine tsp kosher salt tsp fresh cracked black pepper 15 20 cherry tomatoes seeded see quick cooking.
Use a small 14 tsp metal measuring spoon to scoop out pulp and discard. Oh boy are they good and pretty too. The most time consuming part is scooping out the pulp. Spoon the mixture into the tomatoes.
Cook stirring often until lightly toasted and crunchy about 3 minutes. Ingredients 16 cherry cocktail tomatoes 12 pound bacon cooked and crumbled 12 cup mayonnaise 13 cup minced green onions white and green parts 3 tbsp minced romaine lettuce. Ingredients 18 cherry tomatoes cup creamy salad dressing such as miracle whip 1 3 ounce can bacon bits such as hormel cup chopped green onions 3 tablespoons grated parmesan cheese such as sargento 2 tablespoons chopped fresh parsley optional. Using a melon baller or small spoon scoop out the inside of each tomato and discard.
